From our suppliers in ASTIGARRAGA (Guipúzcoa) they send us their juicy and tender Txuletones of Greater beef from northern Europe. The extensive green meadows allow extensive livestock farming with a final intensive cycle providing great quality, since they look for cows with good nutrition and therefore with a good fat supply of the Holstein Friesian, Simmental breeds and their crosses.
These Txuletones have up to 50 days of maturation.
The piece maintains the bone to provide greater flavor during its preparation.
This meat is the result of the perfect combination of tradition and BASQUE culture.

Albariño Mar de Viñas wine is made from specially selected grapes from both our vineyards and our growers. Thanks to the light pressing we obtain a high quality must, since it extracts the juice without damaging the skin or seeds of the grapes. After gravity settling 36 hours after pressing, fermentation begins in stainless steel tanks at 16-18ºC.
Pispa is a red wine, young, fresh, friendly, but with the character of DO Montsant wines. Made from the Garnacha Negra and Cariñena varieties, from small vineyards on terraces in the foothills of the Montsant mountain range and on calcareous soil.
Fresh, lively and tasty wine.
It shows a perfect balance between ripe fruit, mineral and roasted touches.
The Tinto from Bodega Villa Nomon is a red wine from Ribera del Duero. of Castille-et-Léon.
In the mouth this red wine is a powerful wine with a good balance between acidity and tannins.
This wine usually goes well with beef or lamb.

It comes from selected plots, located in Rioja Alavesa and planted at altitudes greater than 450 meters. The average age of these vineyards is more than 40 years.
Single-varietal Tempranillo wine, aged for 18 months in American and French oak barrels. Finally it rests in the cellar, refining in the bottle for at least another 18 months.
Cherry red color, hints of red fruits, spices, balsamic and with a delicate roasted perfume. At the end in the mouth, aromas of black pepper and notes of coconut and vanilla stand out.
Viña Pomal remains faithful to the Rioja wine tradition that it represents. Intense, highly aromatic, with good structure and soft tannins, Viña Pomal's flagship is always a safe bet.

Mouth
Smooth, balanced, fresh, tasty and fruity, with good structure and soft tannins
PRODUCTION: With a controlled temperature and a prolonged maceration, an adequate extraction of polyphenolic compounds and reactions is achieved.
AGEING: 12 months in 225-litre French (50%) and American (50%) oak barrels and a minimum of 6 in the bottle.
TASTING: Bright colour, intense garnet with a slight brick hue on the edge, varietal and ageing aromas (oak and vanilla). Complex and elegant on the palate. Balanced and without edges, complex wine with an intense aftertaste and long persistence of candied fruit.
PAIRING: Recommended for red meats, game, seasoned stews and cheeses.
BLACK VERMUT: Full-bodied, rich bitter wood, sherry, flowers, and honey - 2.5 €
MARTINI BIANCO: With an intense smell and a touch of vanilla. The vegetable ingredients translate into a slight bitterness that does not affect the aroma - 2.8 €
MARTINI ROSSO: On the rocks. With a spicy character and a sweetly scented nature, it stands out in a refreshing way - 2.8 €
