Deep cherry red, very bright with a garnet rim and deep purple undertones. Abundant, tinted tears. Intensely aromatic. Aromas of red and stewed fruits dominate with a certain authority over mineral and smoky nuances. Very enveloping with subtle notes of coconut, mocha, and balsamic. On the palate, very elegant and velvety thanks to its pleasant structure of sweet tannins, which lends a silky, long finish and great expressiveness. Production:
The quality of this wine begins in the plantations themselves, cared for with the utmost care. From the beginning of August, grape sampling is carried out in the same plots, to monitor ripening, quality and health, which will determine the optimum point of the fruit and its optimal harvest date. Harvested by hand, at the coolest hours of the day and in 20kg boxes, to respect the quality of the grape as much as possible. Fermentation takes place in 10,000l concrete tanks (no more, to control fermentation as much as possible) at a controlled temperature (22-28ºC). Fermentation and maceration for 24 days with two pumping overs per day. Once alcoholic fermentation is finished, the wine undergoes malolactic fermentation, so important in quality red wines like this one.
Aging:
The wine is placed in 225l barrels without any type of treatment (without clarifying). The barrels are made of French oak, where it remains for as long as the winemaker deems appropriate; in this vintage it was 6 months. During this time, the wine acquires complexity and elegance, maintaining its magnificent fruitiness, characteristics that mark this GREGO Garnacha Centenaria.
Recommended consumption:
Short and long term (8 years), it will improve with time in the bottle.
Serving temperature: between 14 and 16ºC.
Tasting notes:
Beautiful intense cherry color with violet edges. Very fine aromas of high intensity, with great complexity (fruit-wood). Red fruits at their optimal point of ripeness, undergrowth and blue flowers in perfect harmony. In the mouth it is fleshy and tasty, with very good acidity and a very long aftertaste. A great, very elegant and attractive wine.

100% Albariño (12.5% vol.).
The must is macerated on the grape skins and then fermentation begins at a controlled temperature, 18ºC for 15-20 days.

Cava is a supra-autonomous Protected Designation of Origin of Spain. It is a quality sparkling wine, obtained by carrying out a second alcoholic fermentation, in the bottle, of the base wine, and following the traditional method. The wine must remain in contact with the lees for at least nine months and in the same bottle in which the second fermentation took place. It can be white or pink.
The cava requires a minimum aging time in the bottle of nine months for Cavas de Guarda or young Cavas and at least 18 months for Cavas de Guarda Superior.
Cavas are classified in two different ways: according to their sugar content (grams per liter) and according to their aging time.
Depending on the amount of sugar added to the expedition liquor, the following types of cava are distinguished:
Brut Nature up to 3 g, natural per liter, without added sugar.
Extra Brut up to 6 g of sugar per liter
Brut up to 12 g of sugar per liter
Extra Dry between 12 and 17 g per liter
Dry between 17 and 32 g per liter
Semi-dry between 32 and 50 g per liter
Sweet more than 50 g per liter
In the case of the brut nature type, the bottle is not refilled or wine from another bottle of the same vintage is added. The lack of added sugars makes this type of cava more demanding in terms of quality, and its production is increasing while the production of semi-seco is decreasing, and the production of sweet cava has stopped.
Depending on the aging time in the bottle, a Cava can belong to the following categories:
Cavas de Guarda: These are Cavas aged between 9 and 17 months, characterized by being light, fruity and citrusy, with a sparkling bubble.
Cavas de Guarda Superior: Its longer aging time in the bottle adds complexity and aromatic richness.
Cava Reserva: between 18 and 30 months of aging.
Cava Gran Reserva: more than 30 months of aging.
Qualified Paraje Cava: minimum of 36 months.
