Once at the winery, Niepoort Alonso Quijano ferments in stainless steel tanks. Once alcoholic fermentation is complete, malolactic fermentation takes place, partly in the tanks (80%) and partly in barrels (20%). Finally, the wine ages in these containers for approximately 12 months.
