Enrique Mendoza Santa Rosa is a red wine from the D.O. Alicante produced by the Enrique Mendoza winery. This wine is a blend of cabernet sauvignon, syrah, merlot and monastrell.
The grapes used are selected from the vineyards of the Chaconero estate, in Villena. After the harvest, the whole grains are vatted and fermented with environmental yeasts, looking for a deeper wine. The fermentation of the must is carried out at a controlled temperature of 28º. During this process, small and frequent daily pump-overs are carried out.
After completing all the phases corresponding to winemaking, Enrique Mendoza Santa Rosa ages for 17 months in new French oak barrels from Allier.
